This vibrant Black-Eyed Pea Salad is a quick and easy side dish or light lunch, packed with fresh vegetables and a tangy vinaigrette. It’s a healthy and delicious way to enjoy the classic Southern legume.

  • 1 (15-ounce) can black-eyed peas, rinsed and drained
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black-eyed peas, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, Dijon mustard, and cumin.
  3. Pour the dressing over the black-eyed pea mixture and toss to combine.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld.
