Black Bean Tacos

These Black Bean Tacos offer a delicious, protein-packed vegetarian meal with vibrant flavors inspired by traditional Mexican cuisine. Perfect for a quick, healthy dinner or a satisfying lunch.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/2 avocado, sliced
  • 1/4 cup crumbled queso fresco or feta cheese (optional)
  • Lime wedges, for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until soft and translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Stir in the black beans, ground cumin, chili powder, salt, and pepper. Cook for 5-7 minutes, mashing some of the beans with the back of a spoon to create a creamy texture.
  4. Warm tortillas in a dry skillet or microwave until pliable.
  5. Assemble tacos by spooning the black bean mixture onto each tortilla, then top with shredded lettuce, diced tomatoes, cilantro, avocado slices, and queso fresco if using.
  6. Serve immediately with lime wedges for squeezing over the top.

Notes

For extra heat, add a few dashes of hot sauce or chopped jalapeños. These tacos also pair wonderfully with a dollop of sour cream or Greek yogurt.
