Huevos Rancheros

Huevos Rancheros is a traditional Mexican breakfast featuring fried eggs served on warm tortillas topped with a fresh tomato-chili salsa, combining bold flavors and satisfying textures.

  • 2 corn tortillas
  • 2 large eggs
  • 1 cup fresh tomato salsa (diced tomatoes, onions, jalapeños, cilantro)
  • 1/4 cup refried beans (optional)
  • 1/4 cup shredded cheddar or queso fresco
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 lime wedge (optional)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Fry the corn tortillas for about 30 seconds on each side until warm and slightly crispy. Remove and set aside.
  2. In the same skillet, add the remaining oil and crack the eggs into the pan. Fry until the whites are set but the yolks remain runny, about 3-4 minutes. Season with salt and pepper.
  3. If using refried beans, warm them up in a small saucepan or microwave.
  4. To assemble, spread a layer of refried beans on each tortilla (optional), then place a fried egg on top.
  5. Generously spoon fresh tomato salsa over the eggs.
  6. Sprinkle shredded cheese on top and garnish with chopped cilantro.
  7. Serve immediately with lime wedges on the side if desired.

Notes

For extra heat, add sliced jalapeños or a dash of hot sauce. You can also substitute corn tortillas with flour tortillas if preferred.
