  • 4 cups tortilla chips
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup diced tomatoes
  • 2 tablespoons diced red onion
  • 1 jalapeño, seeded and sliced (optional)
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream or guacamole for serving (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Crack eggs into a bowl, whisk with salt and pepper, then scramble in the skillet until cooked through.
  3. Spread tortilla chips evenly on a large oven-safe plate or tray.
  4. Distribute black beans over the chips.
  5. Top with scrambled eggs, diced tomatoes, red onion, and jalapeño slices.
  6. Sprinkle shredded cheddar cheese over all and place under a broiler for 2-3 minutes until cheese melts.
  7. Remove from oven and drizzle with salsa, then garnish with chopped cilantro.
  8. Serve immediately with sour cream or guacamole if desired.

Notes

For extra protein, add cooked breakfast sausage or bacon bits before adding the cheese. Serve with fresh fruit for a balanced meal.
