Delicious Berry Cheesecake

This Berry Cheesecake recipe combines creamy, tangy cheesecake with a burst of fresh berry flavor. It’s a stunning dessert perfect for any occasion, easy to make and sure to impress!

  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • Optional: Berry jam for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press mixture into the bottom of a 9-inch springform pan.
  3. Bake crust for 8-10 minutes, then let cool slightly.
  4. In a large bowl, beat cream cheese and 1 ½ cups sugar until smooth.
  5. Beat in eggs one at a time, then stir in vanilla and sour cream.
  6. Gently fold in 1 cup of mixed berries.
  7. Pour batter over crust.
  8. Bake for 55-70 minutes, or until the center is just set.
  9. Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar.
  10. Refrigerate for at least 4 hours, or preferably overnight.
  11. Top with remaining 1 cup of berries and a drizzle of berry jam (optional) before serving.

Notes

For a richer flavor, use full-fat cream cheese and sour cream. Garnish with whipped cream or fresh mint for an elegant presentation.
