beef vegetable soup

A hearty and wholesome beef vegetable soup packed with tender beef chunks and fresh vegetables, perfect for a comforting meal any day.

Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans, trimmed and cut
  • 1 cup corn kernels
  • 1 can (14 oz) diced tomatoes
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 2 bay leaves
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides.
  2. Add chopped onion and garlic, sauté until softened.
  3. Stir in carrots, celery, potatoes, and green beans; cook for 3-4 minutes.
  4. Add diced tomatoes, corn, beef broth, thyme, basil, bay leaves, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat to low and simmer uncovered for 1 to 1.5 hours until beef is tender.
  6. Remove bay leaves, adjust seasoning as needed.
  7. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, you can add a splash of Worcestershire sauce or finish with a squeeze of fresh lemon juice before serving.
