A Hearty Bowl of Homemade Beef Stew and Dumplings

This hearty beef stew and dumplings is a comforting classic, perfect for a chilly evening. Tender beef and vegetables simmer in a rich broth, topped with fluffy, homemade dumplings.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 lb potatoes, peeled and cubed
  • 1 cup frozen peas

For the Dumplings:

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp cold butter, cut into cubes
  • 3/4 cup milk

Instructions

  1. In a large Dutch oven or pot, heat olive oil over medium-high heat. Brown the beef in batches and set aside.
  2. Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  3. Stir in beef broth, red wine (if using), tomato paste, thyme, rosemary, and bay leaf. Bring to a simmer.
  4. Return the beef to the pot. Cover and simmer for 2-2.5 hours, or until the beef is tender.
  5. Add potatoes and cook for another 30 minutes, or until the potatoes are tender.
  6. While the potatoes are cooking, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and salt.
  7. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  8. Stir in milk until just combined. Do not overmix.
  9. Drop spoonfuls of dumpling dough onto the simmering stew.
  10. Cover and cook for 15-20 minutes, or until the dumplings are cooked through and golden brown.
  11. Stir in the frozen peas during the last 5 minutes of cooking.
  12. Remove bay leaf before serving.

Notes

Serve hot and garnish with fresh parsley, if desired. For extra flavor, try adding a splash of Worcestershire sauce to the stew while simmering.
