Ingredients

  • 1 pound ground beef
  • 1 cup macaroni pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic; sauté until translucent.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add diced carrots and celery; cook for 5 minutes until slightly tender.
  4. Pour in beef broth and diced tomatoes. Stir in oregano, basil, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
  6. Add macaroni pasta and cook until al dente, about 8–10 minutes.
  7. Taste and adjust seasoning as needed before serving hot.

Notes

For extra richness, top with freshly grated Parmesan or add a handful of spinach in the last minutes of cooking.
