Basketball Ice Cream Cookie Sandwiches

Delight in these fun and delicious Basketball Ice Cream Cookie Sandwiches combining soft cookies with creamy ice cream, perfect for game day treats or summer snacks.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups mini chocolate chips
  • 1 quart vanilla ice cream
  • Orange food coloring
  • Black edible food pen or melted dark chocolate for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture. Fold in mini chocolate chips.
  6. Drop rounded tablespoons of dough onto prepared baking sheets and bake for 10-12 minutes or until edges are golden.
  7. Remove and cool completely on wire racks.
  8. Once cooled, soften the vanilla ice cream slightly. Tint the ice cream with orange food coloring, stirring gently.
  9. Place a scoop of orange ice cream on the bottom side of one cookie, then top with another cookie to form a sandwich. Press gently to spread ice cream evenly.
  10. Use black edible food pen or melted dark chocolate to draw basketball lines on the top cookie.
  11. Freeze assembled sandwiches for at least 1 hour before serving.

Notes

For extra fun, try using different ice cream flavors or add sprinkles around the edges of the sandwich. Perfect for basketball parties or summer gatherings!
