Healthy and naturally sweet, these Banana Oatmeal Bars make a perfect on-the-go snack or breakfast option, packed with wholesome oats and ripe bananas.

  • 2 ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup chopped walnuts or pecans (optional)
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add honey (or maple syrup), almond butter, and vanilla extract to the mashed bananas and mix well.
  4. In a separate bowl, combine rolled oats, cinnamon, salt, and nuts if using.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until fully combined.
  6. Fold in chocolate chips if desired.
  7. Press the mixture evenly into the prepared baking pan.
  8. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
  9. Remove from oven and let cool completely before cutting into bars.

Notes

For a nuttier flavor, toast the oats lightly before mixing. These bars can be refrigerated for up to a week or frozen for longer storage.
