Deliciously soft banana nut bagels that combine the sweetness of ripe bananas with the crunch of toasted nuts, perfect for a nutritious breakfast or snack.

  • 2 ripe bananas, mashed
  • 3 cups bread flour
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1/4 cup warm water (about 110°F)
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts or pecans, toasted
  • 1 tsp cinnamon
  • 1 tbsp vegetable oil
  • 1 egg white (for egg wash)
  • Water and baking soda for boiling

Instructions

  1. In a small bowl, dissolve yeast in warm water and let sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine mashed bananas, sugar, oil, and cinnamon. Mix well.
  3. Add the yeast mixture and stir to combine.
  4. Gradually add bread flour and salt, stirring until a dough forms.
  5. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  6. Incorporate the toasted nuts evenly into the dough while kneading.
  7. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  8. Punch down the dough and divide it into 8 equal pieces.
  9. Shape each piece into a ball, then poke a hole through the center to form bagels.
  10. Preheat oven to 425°F (220°C).
  11. Bring a large pot of water to a boil and add 2 tablespoons of baking soda.
  12. Boil each bagel for about 1 minute on each side, then remove and place on a baking sheet lined with parchment paper.
  13. Brush each bagel with egg white for a shiny crust.
  14. Bake for 20-25 minutes or until golden brown.
  15. Let cool on a wire rack before serving.

Notes

For extra flavor, try adding raisins or substituting the nuts with pecans. Serve warm with cream cheese or honey.
