  • 1/2 cup fresh blueberries
  • 1 egg
  • 2 tablespoons honey
  • 1/4 cup rolled oats
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Optional: handful of chopped nuts or granola for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese, egg, honey, vanilla extract, cinnamon, and salt. Mix until smooth.
  3. Gently fold in the rolled oats and half of the blueberries.
  4. Divide the mixture evenly into two small oven-safe bowls or ramekins.
  5. Top each bowl with the remaining blueberries.
  6. Bake for 25-30 minutes or until set and lightly golden on top.
