  • 1 pound bacon, cut into 1/2-inch pieces
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 8 cups crumbled cornbread (day-old preferred)
  • 4 cups cubed bread (day-old preferred)
  • 2 cups chicken broth
  • 1/2 cup chopped fresh parsley
  • 1/4 cup melted butter
  • Salt to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving the bacon fat in the skillet.
  3. Add onion and celery to the skillet with the bacon fat and cook until softened, about 5-7 minutes. Stir in sage, thyme, and pepper.
  4. In a large bowl, combine crumbled cornbread, cubed bread, and cooked bacon.
  5. Pour the onion and celery mixture over the bread mixture. Add chicken broth and parsley. Toss gently to combine.
  6. Drizzle melted butter over the stuffing and toss again. Season with salt to taste.
  7. Transfer the stuffing to a greased 9×13 inch baking dish.
  8. Bake for 30-35 minutes, or until golden brown and heated through.
  9. Let stand for 10 minutes before serving.

Notes

For extra flavor, use a combination of sweet and savory cornbread. You can also add chopped apples or cranberries for a festive touch.
