Avocado Pasta Salad

This creamy avocado pasta salad is a quick and easy dish perfect for lunch or a light dinner. Toss pasta with a vibrant avocado dressing, fresh vegetables, and your favorite protein for a healthy and satisfying meal.

Ingredients

  • 8 ounces pasta (rotini, penne, or farfalle work well)
  • 2 ripe avocados
  • 1/4 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/4 cup water, or more as needed for desired consistency
  • Salt and black pepper to taste
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water. Set aside.
  2. In a food processor or blender, combine avocados, basil, lemon juice, garlic, olive oil, and water. Blend until smooth and creamy. Add more water if needed to reach desired consistency.
  3. Season the avocado dressing with salt and black pepper to taste.
  4. In a large bowl, combine the cooked pasta, cherry tomatoes, and red onion.
  5. Pour the avocado dressing over the pasta mixture and toss gently to coat.
  6. If desired, sprinkle with crumbled feta cheese.
  7. Serve immediately or chill for later.

Notes

For added flavor, consider adding grilled chicken, shrimp, or chickpeas to the salad. You can also substitute the basil with cilantro or parsley.
