Asparagus Zucchini Squash

A vibrant and healthy vegetable medley featuring fresh asparagus, zucchini, and squash sautéed to perfection—an easy side dish packed with flavor and nutrients.

Ingredients

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 medium zucchinis, sliced
  • 2 medium yellow squash, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add asparagus pieces and cook for 4-5 minutes, stirring occasionally.
  4. Add sliced zucchini and yellow squash to the skillet, season with salt and pepper, and cook for another 5-7 minutes until vegetables are tender but still crisp.
  5. Remove from heat and stir in lemon juice if using.
  6. Garnish with freshly chopped parsley and serve warm.

Notes

For added depth, sprinkle some grated Parmesan cheese on top before serving or add a pinch of red pepper flakes for a subtle kick.
