Ingredients

Scale
  • 1 cup quinoa, rinsed
  • 2 medium sweet potatoes, peeled and diced
  • 1 large apple, cored and chopped
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 2 cups baby spinach or mixed greens

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and golden.
  2. Meanwhile, cook the quinoa according to package instructions. Typically, bring 2 cups of water to boil, add quinoa, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and set aside.
  3. In a small bowl, whisk together the remaining olive oil, apple cider vinegar, honey, salt, and pepper to make the dressing.
  4. In a large bowl, combine the cooked quinoa, roasted sweet potatoes, chopped apple, dried cranberries, pecans, and baby spinach.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve immediately or chill for 30 minutes to allow flavors to meld.
