Apple Cider Cookies

Delight in soft, spiced Apple Cider Cookies that capture the warm essence of autumn with every bite. These cookies are perfect for cozy gatherings or a sweet snack.

  • 1 cup apple cider
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • Optional: cinnamon sugar for rolling

Instructions

  1. In a small saucepan, simmer the apple cider over medium heat until reduced to about ¼ cup. Let it cool completely.
  2. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and beat until combined.
  4. Pour in the reduced apple cider and mix well.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Cover the dough and chill in the refrigerator for at least 1 hour.
  8. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  9. Form dough into 1-inch balls and optionally roll them in cinnamon sugar.
  10. Place the balls onto the baking sheet and gently flatten each cookie slightly.
  11. Bake for 10–12 minutes or until edges are lightly golden.
  12. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra festive touch, drizzle the cooled cookies with a simple powdered sugar glaze flavored with a bit of apple cider.
