  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • For the Cinnamon Oat Topping:
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup (1/2 stick) cold unsalted butter, cubed

Instructions

  1. Make the Crust: In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Prepare the Filling: In a medium bowl, whisk together apple butter, heavy cream, vanilla extract, and cinnamon until smooth.
  3. Make the Topping: In a medium bowl, combine rolled oats, flour, brown sugar, and cinnamon. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Assemble and Bake: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough to a 12-inch circle. Transfer to a 9-inch pie plate. Trim and crimp the edges.
  5. Pour the apple butter filling into the pie crust. Sprinkle the cinnamon oat topping evenly over the filling.
  6. Bake for 45-50 minutes, or until the crust is golden brown and the filling is set. Let cool completely before serving.
